Omega -3 Mayonnaise

Research links many benefits to omega -3 From keeping the heart healthy to reducing inflammation and depression. This mayonnaise is packed with it! Works as a healthy side to many of my recipes. You could try adding garlic to make it Alioli.

  • Preparation to plate time: 10 mins


1 Free range egg

½ teaspoon of lemon juice

½ teaspoon of dry mustard

75ml of extra virgin olive oil

75 ml of flaxseed oil (you can just use more olive oil)

Sea salt to taste


Add the egg dry mustard, sea salt and lemon juice to a blender.

Add 1 drop of olive oil and continue to blend on high for 20 seconds. You must be careful not to pour too much oil in too soon to prevent it separating and curdling. Add two more drops and blend for 20 seconds.

Continue adding the oil slowly and blending.

The mayonnaise should start to thicken.
